Cottage cheese is a versatile ingredient

When you think of cottage cheese, do you immediately think of dieting? Well, think again.
Cottage cheese has been the go-to food for those who want to slim down, but please don’t limit this versatile cheese to just being a tummy trimmer.
It is used here in a dessert, an omelet, a loaf of bread and in a potato salad. I think you’ll be surprised.
So try at least one of these and tinker with it as you see fit. Fine-tuning recipes is just another part of being a cook. I hope you enjoy one of these.

Pickens Elementary completes box tops fundraiser

PICKENS — Pickens Elementary School administrators have announced the completion of their 2010-2011 Box Tops for Education fundraising campaign.

This year the school had set a goal of earning $1,689 through Box Tops to assist in purchasing new playground equipment for their school. PES surpassed their goal and earned $2,292.

Gentis P. Whitmire
Six Mile — Mrs. Gentis Pilgrim Whitmire, 96, of 231 Lusk Road, wife of the late Col. Asa Palmer Whitmire, died Tuesday, April 5, 2011, at Cannon Memorial Hospital.
Born in Pickens County, a daughter of the late Arthur and Elizabeth Bolding Pilgrim, Mrs. Whitmire was a homemaker and a member of Mountain View Baptist Church. Gentis was an avid bowler and had a love for gardening.
Surviving are a daughter, Doris Carl and her husband Leland of Magnolia, Texas; a sister, Beulah Chappell of Pickens; four grandchildren, Leland and Brian Carl and Jeffrey and Keri Whitmire; and four great-grandchildren, Camden and Kenzie Carl and Asa and Jaxson Whitmire.
In addition to her husband and parents, Mrs. Whitmire was predeceased by a son, Gary Palmer Whitmire; four brothers, Coy, Hoyt, Calvin and Carl Pilgrim; and three sisters, Lena Murphree, Dessie Dodson and Olive Riggins.
Funeral services were 2 p.m. Saturday at Mountain View Baptist Church, Six Mile, with the Rev. Rick Hayes officiating. Burial followed in Hillcrest Memorial Park.

BREAKING NEWS: Second arrest made in LHS embezzlement case

LIBERTY — Another arrest has been made in connection with the alleged embezzlement of funds at Liberty High School, according to school district communications director Julie Thompson.

LHS principal arrested, charged with embezzling more than $10,000

LIBERTY — The Liberty High School principal placed on paid administrative leave after a school records audit in February has been arrested, accused of stealing more than $10,000 from LHS and the School District of Pickens County.

84 jobs chopped in SDPC budget battle

LIBERTY — A vocal crowd of about 1,000 people was on hand at Monday night’s called school board meeting, lobbying against several proposed cuts aimed at absorbing a loss of $5 million in stimulus funds.
The board, in a 4-2 vote, cut 84 jobs, information not released to those in attendance of the meeting but disclosed later to the media. The district will lose $5 million in federal stimulus funds and has been considering ways to make up the deficit.

Fly-In/Cruise-In to benefit MOW

LIBERTY — The second annual Fly-In/Cruise-In to benefit Meals on Wheels is scheduled for this Saturday from 10 a.m.-4 p.m. at the Pickesn County Airport.

New Walmart opens next week

EASLEY — Bringing with it approximately 200 new jobs, the new Walmart at Easley’s Town Center will officially open for business next week.

The Walmart, located at 115 Rolling Hills Circle, will open its doors at 8 a.m. next Wednesday morning following a 7:30 a.m. ribbon-cutting ceremony.

Nationally known author, food expert coming to Pickens

PICKENS — Nationally known author and food expert Ginny McCormack will be in Pickens next Wednesday, April 13, for a book signing at East Main Treasures from noon-3 p.m.

McCormack is a cooking instructor, speaker, food columnist, author of Sunday in the South, host of GinnyMcCormackCooks.com and editor of the online food magazine Food Lover.
