Co-op announces record-breaking funds raised at 21st Blue Ridge Fest
PICKENS — Blue Ridge Electric Cooperative announced recently that the 21st annual Blue Ridge Fest, held on May 4, raised a record-breaking amount of $225,000 to benefit local nonprofit organizations in Greenville, Anderson, Oconee and Pickens counties.

World of Energy plans free summer programs
UPSTATE — Duke Energy’s World of Energy education center will host “Wednesdays at the World of Energy,” a series of free summer programs for children, throughout June and July.
Each program starts at 10 a.m. and is geared for children ages 6 to 12. Adult supervision is required. Program dates are June 20 (registration required), June 27 (registration required) and July 18.

There’s a theory that it takes 10 years for a new dish to make its way from California to the Southeast. Or at least it used to. But with the advent of Food Network and a multitude of cooking shows, the times have changed and so have some of our food choices.
Not so long ago, tofu was thought of as tasteless, much like soy filler. That’s chiefly because it is.
You must add the flavor, but if you don’t want to chance it in the recipe that features tofu, don’t worry. You can substitute chopped chicken. Just be sure it’s done after sautéing it.
All these recipes are nice for warm weather. They’re quick and easy. And they’re delicious. So, here’s to spending as much time outside as possible. Keep it simple.
